Queijadas da Sapa traces its origin to 1756, when Maria Sapa began making the small cinnamon-dusted cheese-and-pastry tarts in Ranholas, on the old road into Sintra, selling twenty dozen a day to travellers passing through. The business moved into its current building in the historic centre in 1890, after the railway reached Sintra and shifted traffic away from Ranholas; the shop is mentioned in the writing of Eça de Queirós and Ramalho Ortigão. It is recognised as the oldest of Sintra's officially registered queijada makers, still producing the tarts by hand on Volta do Duche.
